Present state-of-art design of wood fired bakery consists of a newly designed efficient biomass combustor and a baking unit.

The combustor has 26.46 % thermal efficiency at wood burning rate of 4kg / hour with low level of harmful emissions like concentration of carbon monoxide (% v/v) is less than 0.2 by Orsat, concentration of particulate matter is 57.4 mg / NM3.

The baking unit consists of gas inlet duct with a screen at bottom and inclination adjustable deflectors for equal amount of gas distribution to all gas flow passages located below and above of all baking chamber walls. Flue gas is passed throughout the width of gas flow passages for the provision of restricted inlet path in gas flow passages. Better heat transfers from flue gas to baking chambers is possible due to flow of hot gas both above the top wall and bottom wall of each baking chamber. After flowing through gas passages, flue gas is released to outside through outlet duct. In the new bakery system if temperature reduction is necessary in baking chambers, the flue gas can be directly released from gas inlet duct to outside by opening of sliding cover of gas release opening. This time inclination angle of deflectors inside of gas inlet duct are reduced either to reduce amount of gas flow through gas flow passages or to close inlet path of gas flow passages completely by deflector plates, which whole amount of gas is released from gas inlet duct to outside without passing through gas flow passages.

History & Development

The primary object of the invention is to design an improved wood fired small bakery unit. Other objectives of this invention is the following: designing a wood combustor with high thermal efficiency and with reduced rate of pollution, providing better heat transfer arrangement inside of baking box, and designing a wood fired small bakery unit with accurate baking temperature control system in continuous manner.
